As the weather warms up, this noodle salad bowl is an easy meal prep recipe for lunch or dinner. Change up your favourite vegetables, dressing and protein source (beef/chicken/tofu/fish) for endless variety. 

 

Meal prep tip - cooking the protein source earlier in the week means this noodle salad bowl can be made in a few minutes on busy days.

 

INGREDIENTS:


Salad:

1 individual serve rice noodles (40g)

1 cup mixed lettuce leaves

½ red capsicum

1 baby cucumber

½ cup rainbow salad mix

¼ cup fresh broccoli

20g avocado

 

Protein:

150g grilled chicken breast (cooked in pre-made lemon grass marinade)

 

Dressing:

*add ingredients to taste

Lemon, salt, coriander, chilli, olive oil


 

METHOD:

  1. Spray olive oil spray in pot and grill chicken until cooked through. Add pre-made lemongrass paste and seasonings while cooking.
  2. Place noodles in boiling water for 2 mins or until cooked.
  3. Set up bowl with vegetables and add noodles and chicken.
  4. Add dressing and garnish with coriander.
  5. Mix well and enjoy!
