Peanut Butter Snack Bars
 

Calling all peanut butter lovers. If you’re looking for a 3pm pick-me-up treat read on. The best part about this simple recipe is there is no cooking involved! Just mix together a handful of ingredients and let the fridge do all the work.

 

 INGREDIENTS

2 cups puffed brown rice - you can find these in the health food section of Coles or Woolies
3/4 cup smooth peanut butter 
1 tsp vanilla extract 
1/4 cup unrefined coconut oil- any brand is fine 
1/4 cup maple syrup 
Pinch of salt

METHOD

  1. In a large mixing bowl add peanut butter, vanilla extract, maple syrup, and melted coconut oil (melt this for about 30 seconds in microwave).
  2. Whisk until combined.
  3. Pour in rice puffs and mix through. You want to coat all of the the puffs in the peanut butter mixture.
  4. Tightly pack mixture into a small paper lined baking tin (square or rectangular works best).
  5. Freeze for 1 hour.
  6. Remove from freezer and slice into small bars. Keep stored in fridge for when the sweet-toothed monster comes knocking.
