Peanut Butter Snack Bars
Calling all peanut butter lovers. If you’re looking for a 3pm pick-me-up treat read on. The best part about this simple recipe is there is no cooking involved! Just mix together a handful of ingredients and let the fridge do all the work.
2 cups puffed brown rice - you can find these in the health food section of Coles or Woolies
3/4 cup smooth peanut butter
1 tsp vanilla extract
1/4 cup unrefined coconut oil- any brand is fine
1/4 cup maple syrup
Pinch of salt
- In a large mixing bowl add peanut butter, vanilla extract, maple syrup, and melted coconut oil (melt this for about 30 seconds in microwave).
- Whisk until combined.
- Pour in rice puffs and mix through. You want to coat all of the the puffs in the peanut butter mixture.
- Tightly pack mixture into a small paper lined baking tin (square or rectangular works best).
- Freeze for 1 hour.
- Remove from freezer and slice into small bars. Keep stored in fridge for when the sweet-toothed monster comes knocking.
